Chicken Cauliflower Fried Rice

This Chicken Cauliflower Fried Rice is on our meal rotation at least a couple of times a month! While we don’t eat totally low-carb, I’m always looking for ways to sneak more veggies into our family meals. We have found that cauliflower rice has been an awesome substitution for normal rice. Don’t get me wrong, we still get our whole grains fill in many other instances, but cauliflower rice has been an easy and tasty way that we have found we can jam pack as many veggies into our meals as we can. You can easily make your own cauliflower rice by pulsing a head of cauliflower in your food processor. It literally takes at most 10 seconds to become just the right size! (Okay, it could be longer in other food processors, but our Ninja got its name for a reason. It’s so fast and I love it!)
If you prefer to buy your cauliflower rice, kudos to you for saving time! We have found that we love the frozen riced cauliflower you can get at Costco. Either way, you’re using minimal kitchen utensils!
In this recipe, I include a sauce. Some people like their fried rice just with some soy sauce or their favorite teriyaki sauce dashed in. Use the sauce recipe if you’d like, and only add as much as you think you need!

Chicken Cauliflower Fried Rice
Ingredients
- 2 tbsp olive oil
- 1 medium-large chicken breast diced into small cubes
- 1 tbsp minced garlic
- 1 cup frozen mixed veggies (peas, corn, green beans)
- 1 package riced cauliflower (about 4-5 cups) or 1 head riced in a food processor
- 1/2 cup chopped spinach
- salt and pepper to taste
- 3 eggs
- green onions for garnishing
- nuts for garnishing we use cashews or peanuts
For the sauce
- 3 tbsp soy sauce
- 1 tbsp apple cider vinegar
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp ginger powder
- 1 tbsp honey
- 1 tbsp olive oil can use other oils like sesame or canola
- 2 tbsp water
- salt & pepper to taste
Instructions
- Heat a large cast iron skillet or pot to medium-high heat with the olive oil and add
the chicken. Cook it for a few minutes, until it’s cooked through. - Add the riced cauliflower and frozen mixed veggies.
- Cook until the veggies are slightly tender, about 5-10 minutes.
- While that's cooking, make the sauce if you want to use it. Mix all ingredients in a small bowl with a fork or whisk.
- Once the cauliflower is cooked, toss in the chopped spinach, as well as a little salt and pepper to taste (go light, the sauce will add salt). You want the spinach to just warm up and soften , so just stir around for a minute until it's fully incorporated.
- Crack the 3 whole eggs into the pan and mix them in. You can do this by piercing the yolks with your spatula and swirling them into the rest of the food.
- Once the eggs are cooked, reduce the heat to low and toss the fried rice with your sauce.
- Garnish with chopped green onions and nuts and serve in bowls!
