Chicken Cauliflower Fried Rice

This is a delicious low-carb and filling meal that the whole family will love!

Ingredients

  • 2 tbsp olive oil
  • 1 medium-large chicken breast diced into small cubes
  • 1 tbsp minced garlic
  • 1 cup frozen mixed veggies (peas, corn, green beans)
  • 1 package riced cauliflower (about 4-5 cups) or 1 head riced in a food processor
  • 1/2 cup chopped spinach
  • salt and pepper to taste
  • 3 eggs
  • green onions for garnishing
  • nuts for garnishing we use cashews or peanuts

For the sauce

  • 3 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp ginger powder
  • 1 tbsp honey
  • 1 tbsp olive oil can use other oils like sesame or canola
  • 2 tbsp water
  • salt & pepper to taste

Instructions

  • Heat a large cast iron skillet or pot to medium-high heat with the olive oil and add
    the chicken. Cook it for a few minutes, until it’s cooked through.
  • Add the riced cauliflower and frozen mixed veggies.
  • Cook until the veggies are slightly tender, about 5-10 minutes.
  • While that's cooking, make the sauce if you want to use it. Mix all ingredients in a small bowl with a fork or whisk.
  • Once the cauliflower is cooked, toss in the chopped spinach, as well as a little salt and pepper to taste (go light, the sauce will add salt). You want the spinach to just warm up and soften , so just stir around for a minute until it's fully incorporated.
  • Crack the 3 whole eggs into the pan and mix them in. You can do this by piercing the yolks with your spatula and swirling them into the rest of the food.
  • Once the eggs are cooked, reduce the heat to low and toss the fried rice with your sauce.
  • Garnish with chopped green onions and nuts and serve in bowls!

Notes

*Test the sauce before using to make sure it's the right saltiness and flavor for you. Add more water if it's too salty, and add more salt if you want more! 
*You don't want soggy cauliflower rice, so cook it just so that it has a little bite to it. 
*We use organic soy sauce, because it's made using the traditional method and has a lot of good health benefits. I would definitely recommend it, but use what you have! 
*This recipe is easily adaptable to what you have on hand, so don't worry if you can't follow the recipe perfectly. Add in different veggies, garnish with what you prefer, and make it your own!
